I love this sandwich because it looks elaborate but doesn’t have anything fancy in it!

Ingredients

3 ounces unsalted butter

1 tablespoon flour

½ cup whole milk

1 bay leaf

kosher salt

2 tablespoons grated Parmesan cheese

6 ounces Gruyere cheese, grated

8 slices brioche bread

8-12 slices good quality ham (about ¾ pound)

4 eggs
