Peanut Butter Cookies

I love little touches like flattening the cookies and ensure they bake evenly, as peanut butter cookie dough is denser than most. Do not overbake these- they may seem shy of doneness and will not develop a deep brown color, but trust that once cooled they will be firm enough to handle. This is a good sandwich cookie with some dark chocolate frosting or even a dollop of crunchy peanut butter.

Ingredients

1 1/2 cup all-purpose flour

3/4 teaspoom baking powder

1/2 cup unsalted butter, at room temperature

1/2 cup dark brown sugar

1/2 cup sugar

1 teaspoon kosher salt

1 cup smooth peanut butter

1 teaspoon vanilla extract

1 large egg

Makes: 14-18 cookies

Instructions

  1. Preheat oven to 350F
  2. In the bowl of an electric mixer fitted with the paddle attachment, mix the butter, salt, and sugars on medium speed until fluffy, 5-7 minutes. Add peanut butter and mix until incorporated. Add the egg and vanilla and mix until smooth. On low speed, add the flour mixture and beat until just incorporated.
  3. Roll: Roll dough into one inch balls and place on two baking sheets lined with parchment paper. Flatten cookies with a fork in a criss-cross pattern.
    Bake: Bake cookies for 8-10 minutes, or until the edges just start to turn light brown. Cool at least 5 minutes before removing from tray.
