Dairy-Free Orange Cake
This recipe is a real keeper and comes from deep in one of my notebooks. My mom made this periodically and I just fell in love with it. I love a dairy free dessert when it doesn’t feel like anything is missing? It just tastes delicious in it’s own right. This is one of those recipes. You could totally pour a little sugar glaze or even reduce some orange juice and honey and drizzle it over this cake if you want some type of topping. The orange flavor is intense. Do not use fresh squeezed orange juice for this.￼ (but fresh orange zest, yes.)
1. In a large bowl, sift together 1 1/2 cups of all purpose flour, 1 cup sugar and 1 teaspoon baking soda.
2. In another large bowl, whisk together 1 cup orange juice, 1/3 cup extra-virgin olive oil, 1 tablespoon grated orange zest, 1 teaspoon apple cider vinegar & 1 teaspoon vanilla. gently stir in the dry ingredient. Do not over mix.
3. Spoon the batter into a greased 8 x 8 pan & bake at 350F until a small knife inserted in the center emerges clean, 30-35 minutes. Cool. Slice & eat. Glaze or frost if you like
