Seared Branzino with Lemon

Pan searing a succulent Branzino filet is an easy and fast way to create an elegant main course for a dinner party. High heat creates a crispy delicious skin and simple preparation combined with minimal cooking time lets you spend more time with your friends and family. You can apply this technique to lots of different fish.  Try it with Mahi Mahi or Swordfish with some fresh lime.  It’s also great with Salmon or Flounder too….The only thing that changes is the cooking time.

Ingredients

3 tablespoons of extra-virgin olive oil

Four 2-3-ounce Branzino fillets, with skin on, bones removed

Kosher salt

Zest and juice from 1 large lemon

Yield: 4 servings

Instructions

  1. Preheat oven to 350F.
  2. Cook the fish: Heat a large skillet over medium heat and add the oil. When the oil begins to smoke lightly, remove the pan from the heat and add the Branzino filets, in a single layer, to the pan, skin side down, one by one, leaving space between each. Return the pan to the heat and cook the skin becomes crispy, 2-3 minutes. The flesh should be pure white. Flip the fish and lower the heat. Grate some lemon zest over the fish and then some lemon juice. Cook 1 minute. Transfer the filets to a platter.
