Quick Strawberry Jam

First we macerate the strawberries in the sugar so they soften then we cook part of them on the stove sot here is a mix of raw, fresh strawberry combined with deeper cooked jam tastes.

If too sweet in any way, stir in a pinch salt…Serve warm with the scones or chilled, if preferred.

Quick Strawberry Jam

Ingredients

  • 2 pints strawberries hulled and split
  • ½ cup sugar
  • 1 tbsp vanilla
  • Splash Balsamic vinegar

Instructions

Macerate:

  • In a large bowl, stir together the strawberries with the sugar and vanilla. Allow the mixture to sit for about 15 minutes until the berries are “weepy”.

Cook:

  • Transfer about 3/4 of the strawberries (and some of the liquid at the bottom of the bowl) to a small saucepan and bring to a simmer over medium heat. Cook until the fruit starts to “break down”, 5-8 minutes. Remove the saucepan from the heat and stir back into the bowl with the raw ones. Stir in a splash Balsamic.
