My father made a version of this stir-fry when I was growing up. He cooked Chinese food as a lifelong hobby and so, more often than not, one of the burners on the stove was fitted for his season wok.

This is a contrast of two major ingredients: the tofu, deliberately left supple and unseasoned and the pork, browned and spiced. He would cook the pork, high heat, with red pepper flakes mixed with Sichuan peppercorns and slices of fresh chili. It was spicy! You can certainly add some thinly sliced chilies for added heat if you like spicy dishes. The neutral tones of the pork and tofu can absorb the heat easily. You can also remove all heat by omitting the red pepper flakes in the recipe.

Pork, Tofu and Vegetable Stir Fry

Ingredients

  • 4 tbsp canola oil
  • 4 lb firm tofu cut into 1-inch cubes
  • kosher salt
  • 2 tsp coriander seeds lightly crushed
  • 1 lb ground pork
  • ½ tsp red pepper flakes
  • 4 large cloves garlic thinly sliced
  • 1 cup snow peas
  • 2 red bell peppers seeded and cut into ½-inch strips
  • 1 small knob fresh giner grated
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp honey
  • Zest and juice of 1 large lemon
  • 2 scallions thinly sliced, green and white parts both

Instructions

Cook the tofu:

  • Heat a large heavy-bottomed skillet over high heat. Add 2 tablespoons of the oil. When the oil begins to smoke, remove the skillet from the heat and quickly (and carefully!) add the tofu in a single layer. Return the pan to high heat and cook, stirring from time to time, until the tofu is lightly browned, 2-3 minutes. Carefully remove the tofu from the pan, drain and wipe the pan clean. Set the tofu aside.

Cook the pork:

  • Heat the same skillet and add the remaining oil. When the oil begins to smoke lightly, add the coriander and stir vigorously for 15 seconds to lightly toast. Add the ground pork in a single layer, season with salt and the red pepper flakes, and brown over medium high heat until cooked through, 3-5 minutes. Use a slotted spoon to drain most of the cooked pork from the oil and set aside with the tofu.

Cook the vegetables:

  • Lower the heat and stir in the garlic and scallions and cook over medium for about 1 minute. Add the snow peas and peppers. And cook until they become tender, 2-3 minutes. Stir in the ginger, soy sauce, honey and lemon. Simmer for an additional minute. Taste for seasoning.

Finish:

  • Add the pork and tofu back into the skillet, add the scallions and gently stir to reheat and combine, 1-2 minutes. Taste for seasoning.
