Grilled Corn Salad

Serves: 3-4

This is a summer greatest hit. There is no way anyone won’t devour this! I like to make it and eat it, freshly assembled and still warm. This salad is also great when combined and allow the flavors to meld together. Serve warm or serve chilled on the patio.

Ingredients

6 large ears fresh corn, shucked

1-2 tablespoons sugar

Kosher salt

2-3 tablespoons unsalted butter

Yield: 3-4 servings

Instructions

  1. Grill the corn: Preheat the grill. Rub the corn with the olive oil and sprinkle with salt. Place the corn on the hottest part of the grill and rotate until charred on all sides, 8-10 minutes. Remove from the grill.
  2. Serve: Sprinkle the corn with the sugar, salt and butter.
