Endive and Radicchio Salad with Blue Cheese

Serves: 3-4

This is a salad of love: Sweetness, bitterness, cohesive flavors, unpredictable ingredients and all tasty. Choose a strong ish blue cheese here like Danish blue or Cabrales. Better to crumble from your own “wedge” of cheese.  Don’t like grapefruit? Sub in the same amount of lemon juice. This is great parked next to a steak or chicken…

Ingredients

Zest and juice from 1 medium pink grapefruit (about ¼ cup)

2 tablespoons Dijon mustard

1 tablespoon honey

1 tablespoon apple cider vinegar

4 tablespoons extra-virgin olive oil

2 medium yellow endive, leaves separated

2 medium red endive or small Radicchio, leaves separated

6-8 sprigs flat leaf parsley, stemmed

Kosher salt

½ cup blue cheese crumbles

Instructions

  1. Make the vinaigrette: In the blender, combine the grapefruit zest and juice, mustard, honey and cider vinegar on high speed. Pour the olive oil in a steady stream through the top. Blend until smooth. Taste for seasoning.
  2. Make the salad: Arrange the endive, radicchio and parsley in a single layer on 4 individual plates or family-style on a large platter. Drizzle with the dressing. Sprinkle with a pinch salt. Sprinkle with the blue cheese.
