Blueberry-Brown Sugar Muffins

Serves: 2-4

These are tasty and rich from the cream cheese and butter. Fresh blueberries are best. You can also make with blackberries.

Ingredients

  • ½ cup cream cheese, softened
  • ¾ cup extra-virgin olive oil
  • 2 tablespoons whole milk
  • ½ cup dark brown sugar
  • ¼ cup sugar
  • 2 teaspoons kosher salt
  • 4 tablespoons unsalted butter, melted
  • 1 tablespoon vanilla
  • 1 large egg
  • 1 cup whole-wheat flour
  • 2 tablespoons all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 tablespoons wheat germ

Makes: 12 muffins

Equipment: One 1 cup, 12 muffin, muffin tin

Instructions

  1. Preheat oven to 350F.
  2. Make the batter: In large bowl, whisk the cream cheese, olive oil and milk together until smooth. Whisk in the brown sugar, sugar, salt, butter, vanilla, and egg. Stir in both flours, baking powder, baking soda and wheat germ into the cream cheese mix. Stir in blueberries. Do not over mix.
  3. Bake: Fill muffin cups to the top, bake for 20-25 minutes or until the tops are browned.
