Walnut Gingerbread Cookies
1 stick unsalted butter, soft
1/4 cup Molasses
1/2 cup sugar
1/3 cup dark brown sugar
1 large egg
2 cups flour
2 teaspoons baking soda
2 teaspoons dry ginger
11/2 teaspoons cinnamon
1/2 teaspoons allspice
1 teaspoon salt
3/4 cup @Fishernutsbrand walnuts, chopped
1. In the mixer with the paddle, “cream” butter, molasses, sugar, dark brown sugar until fluffy, 5-7 minutes. Beat in egg. Stir in flour, baking soda, ginger, cinnamon, allspice & salt. Roll dough 1/2 inch thick between 2 layers parchment. Refrigerate 30 minutes.
2. Sprinkle walnuts over dough & roll the pin over it so the nuts permeate the dough. Cut shapes with cutters & place on a baking sheet. Bake 350F 8-10 minutes. Cool.
Makes 24-30 cookies
