2 cups all-purpose flour
1 teaspoon kosher salt
¾ cup powdered sugar
1 teaspoon zest/1 tablespoon lemon juice
2 sticks unsalted butter, cubed
¾ cup @fishernutsbrand pecans, toasted, chopped
1. Preheat oven to 375F
2. In the bowl of the food processor, “pulse” together the flour, salt and sugar until mixed. “Pulse” in the butter, lemon juice and lemon zest until the dough forms a loose ball. Roll into a log about 3 inches in diameter. Wrap in plastic. Refrigerate.
3. Slice into 1/3 to ½-inch thick rounds; bake on greased baking sheet 10-12 minutes or until light brown.
Makes 24-30 cookies
