1 stick (8 tablespoons) unsalted butter
½ cup shortening
2/3 cup sugar
1 teaspoon kosher salt
1 large egg yolk
1 tablespoon heavy cream
2 teaspoons vanilla
2 cups all-purpose flour
8 ounces dark chocolate, melted
2 cups @fishernutbrand walnuts, chopped, toasted
- Preheat oven to 375F.
- In the bowl of the electric mixer fitted with the paddle attachment, “cream” the butter, shortening, sugar & salt until smooth and fluffy, 5-8 minutes. Mix in egg yolk, cream and vanilla. Remove the bowl from mixer & gently stir in the flour.
- Line 2 baking sheets with parchment. Fill a pastry bag fitted with star tip with about ½ of batter. ”Pipe” the cookies, leaving space between. Repeat second tray. Bake in oven 12-14 minutes til golden brown.
- Fill the cookies: Stir walnuts into the chocolate and fill center “well” of each cookie.
Makes about 24-30 cookies
