I know this is a cheffy ingredient. I know it can be fussy. I know you think you’re going to buy them and not know what to do with them. They are honestly delicious and taste like springtime to me. Just buy some, wash thoroughly and sauté in some hot oil with a pinch of salt, pepper and sugar. Delicious. They are also tasty roasted in the oven, which draws out the water and leaves you with their pure, almost grassy fresh flavor.
