Fairy Tale Eggplant


The green market at Union Square is a case study in eggplant towards the middle and end of summer, and I love it. One of my favorites is Fairy Tale Eggplant. They are small to middle-sized and have a wonderful, fleshy inside with very few seeds.  I usually buy them at Stokes Farm and simply cut them in half, sprinkle with some salt, olive oil and a pinch of dried oregano and pop them in the oven. I cook until tender and toss with some lemon juice or vinegar. Delicious. I can even get my daughter to eat them. Granted, her favorite color is purple so that helps the situation…
