The Notebooks of Michael Bras: Desserts
I am a sucker for any notebook that feels like it was hand written by the chef. Michel Bras, as I understand it, is likely the inventor of the molten chocolate cake! I love the black fig tart…I love his ideas for cooking with pineapple (what I often refer to as the “death” fruit because it can really steamroll a lot of other more delicate flavors in a dish). I love the illustrations. They help me think about assembling and structuring dishes. The drawings make me think about layering flavors. There are sometimes components I love (the tuile recipe) and then larger ideas too. I feel like this is a book you can take a little or a lot away from. Either way, I find it inspiring!
