I don’t always read through new cook books. I also flip through the older ones. I love this book because it breaks down a number of basic and essential Japanese techniques. Sandwiching protein between sheets on Kombu seaweed to transform the texture and taste? Too cool. It’s simple and filled with pictures. I love it.
