Meat by Pat LaFrieda is a book I love. Obviously I am biased because he is someone I consider a dear friend and meat “confidant” for years. When I wanted to make bacon from beef and failed so many times, chewing tough brisket after brisket, Pat calmly suggested veal breast and I was off to the races. He and his cousin Mark Pastore are incredible people who share a great passion for domestically sourced meat that tastes great. This book is a compilation of various recipes Pat helped develop (or, enjoyed eating) with chefs and some basic ways to use and cook meat. This book is not fussy and it covers the topic in a way that encourages you to cook!
